Quite a few highways in the midwestern/western US where we could easily get away with this.

I could get away with this in everysingle restricted access highway in Mexico except for the cities peripherial roads.

Having such a high speed limit will do nothing, comerce is inspired by fuel economy and that speed limit will only pressure some drivers who do not have the capacity to hold a car at that speed (or pressure cars not meant to go that fast) past their limit.
Speed limits should exist because big accidents aren’t caused by high speed, but by high speed deltas between slow and fast trafic. maybe use monitoring and data to adjust speed limits depending on road condition, trafic, hour, weather, etc.
If a trucker sticks to 90km/h then he’s a bigger risk in a highway with a 160 limit than in a highway with a 70 limit.

If I-85 in northern NC wasn’t a giant construction zone right now, I could have easily run 100 all the way from the VA border to Greensboro.
